Copycat Lofthouse Cookie Recipe

My kids really like the Lofthouse Cookie at the store, and this was the closest recipe I could find. This was the first recipe I made after my ACL surgery. Since I was downgraded to only one crutch, why not make cookies?

I know I can’t stay out of the kitchen sometimes and my kid were coming back from a week at my mom’s house. Lofthouse cookies have a distinct taste to them and they are a great frosted sugar cookies that can be made for any holiday or occasion by changing the sprinkles or frosting colors.

My kids always love these cookies because they are soft, tender and topped with super sweet buttercream and sprinkles. Basically a kid’s dream come true.

I decided to use the cookie ball method instead of rolling them to and cutting them. Who has time for that? I don’t care if my cookies are exactly the same size like the true Lofthouse Cookie in the store. These are homemade and they should look like it.

The batter ended up looking basically like a thick cake batter, which makes sense!

WHAT YOU NEED TO MAKE COPYCAT LOFTHOUSE COOKIES

  • Butter
  •  Sour Cream
  •  Sugar
  • Egg
  • Vanilla extract
  • Flour
  • Baking powder
  • Baking soda
  • Salt
 
Roll your simple dough into 2 inch balls and I used a silpat liner.

I found it useful to have a little pile of flour for both my hands when I was rolling the cookie dough balls and for dipping the glass bottom when I was flattening them. I think I did not flatten them enough as they were pretty thick.
 
That was the consensus from the family at least.

HOW TO MAKE THE FROSTING USED IN LOFTHOUSE COOKIES

 
After they are baked and cooled, be sure not to brown these, make your loft house cookie frosting. Basically a buttercream frosting that you can dye any color of the rainbow. Since St. Patrick’s Day is around the corner, green it was.

Cover each cookie with a thin spread of frosting and then immediately add sprinkles. Sprinkles are a trademark for these cookies so don’t leave them out if you are trying to be authentic.

Copycat Lofthouse cookies

Copycat Lofthouse cookies  perfect butter cookies with a light frosting

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup Sour Cream
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 3 cups flour
  • 3/4 tsp baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp salt
  • FROSTING
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 2-3 TB milk
  • green food coloring, optional
  • Sprinkles

Instructions

  1. In a large bowl of a mixer, cream butter until light and fluffy. Add sugar. Beat in egg and vanilla.
  2. Combine the flour, baking powder, and salt; add to creamed mixture and mix well. Form dough into 1/2-1" balls and place on cookie sheets. Flatten with the bottom of a glass dipped in flour.
  3. Bake at 375 degrees for 6-8 minutes or until set but not brown. Cool on wire racks.
  4. For the frosting, cream butter. Add powdered sugar and vanilla; it will be very stiff. Add 3-4 tablespoons of milk, 1 tablespoon at a time until spreading consistency is reached. Add food coloring to a portion or all of frosting if desired. Frost cookies.

  3. I was attracted to the sour cream in the cookies. I love cookies with cream cheese or sour cream added to them. These sound delicious!

  4. I know these are copycat cookies but they look better than the real deal! The green color is perfect for St. Patrick’s Day too. Yum!
