Chocolate Muffins with Peanut Butter Cream Cheese. Secret Recipe Club

Once again it is time for the Secret Recipe Club reveal. So fun to go through other food blogs and find a recipe to try. Even more exciting is to see what others thought was an interesting recipe to try off my blog. This month I am recreating the pleasures of Reeses Peanut Butter Cups into a healthy breakfast or snack option.For those of you new to this club concept, each month we are assigned another blog and secretly find a recipe post that we would like to try, then reveal our experience with their recipe. This month I was assigned to The Healthy Cheapskate blog. If you are not familiar with this blog it is full of inexpensive recipes that are both low cost but healthy.

While not totally healthy, I decided to combine two of her recipes, one a little more healthy than the other and recreate an amazing pre-breakfast treat we had during our visit to Hershey Park. Chocolate Muffins with Peanut Butter Cream Cheese! Hershey really knew what they were doing when they created this flavor pairing.

For the Muffins I chose her Chocolate Oat Muffins.

I have never made Oat Flour before so I was anxious about trying this. Also there are no eggs in the recipe so I was a little skeptical to say the least. Going for Healthy though remember!

For the Cream Cheese accompaniment I chose this frosting from her post on Chocolate muffins. 

Frosting 2–Cream Cheese Peanut Butter Frosting:

  • 2 oz. cream cheese-room temperature
  • 1 Tbsp butter
  • 2 Tbsp peanut butter
  • 1/4 C powdered sugar

Beat cream cheese, butter, and peanut butter. Add powdered sugar. I served this on the side instead of frosting each muffin.

  3. I make oat flour too and it’s such a great idea. I love the idea of the frosting on the muffin, but no not for breakfast.. too sweet
