Brownie Mix Buckeye Cookies

Have you ever tried to make bullseyes before? You know the Chocolate balls filled with peanut butter? We are updating this Brownie Mix Buckeye Cookie originally made in 2014. 

For me, they often don’t look pretty but now you can have the same amazing flavors of peanut butter and chocolate in this easy to make Peanut Butter Brownie Cookie recipe. Also known as Brownie Mix Buckeye Cookies.  

The recipe only makes 19-24 depending on how large they are but they are rich that one should go a long way.

I love that this cookie recipe starts with a brownie mix recipe. This makes the baking process that much quicker since you are not measuring out flour etc. Just be sure and use a decent brownie mix, one that you would enjoy unaltered.

What you need for Peanut Butter Brownie Cookie Recipe

  • BROWNIE MIX BOX (Regular Size)
  • Cream Cheese Block
  • Butter 
  • Egg
  • Peanut Butter
  • Powdered Sugar

HOW TO MAKE BUCKEYE COOKIES FROM BROWNIE MIX

The brownie mix will be quite stiff no worries, you are doing it right. I kept looking at my recipes too.

 

I found it easiest to use a small ice cream scoop to make the balls of cookie and peanut butter. Simply use a large scoop for the cookie and the smaller size for the peanut butter balls.

Now the real treat of the peanut butter brownie cookies, the center filling. I could have just eaten this with a spoon.

These look good enough to eat before I even bake them. WE have changed up our method since making them in 2013.

CAN I ADD PEANUT BUTTER TO MY BROWNIE COOKIES

In 2014 I scooped out the brownie cookies, and then placed the peanut butter ball into the raw dough and baked.   This year, I baked some of the cookies without the peanut butter and added the ball when it came out of the oven. 

Think of this process  like peanut butter kiss cookies.

I may have baked them too much because it did not appear the sides were set but they tasted great either way.

WHAT TYPE OF FROSTING DO YOU USE FOR BUCKEYE COOKIES?

In the original recipe I made in 2014, we used store-bought fudge or chocolate frosting, frost just the peanut butter part of the cookie.

In 2023 we used chocolate chips simply melted in the microwave. 

VOTE IS IN ON WHICH COOKIE WAS PREFERRED!

After tasting both cookies at dinner last night, it was determined that both cooking methods produced a good cookie. However, the consistency of the peanut butter in the cookies that were not baked with the filling were better. 

So hold off on adding the peanut butter middle until they come out of the oven, just do so immediately. 

Had to sneak a bite to photograph these of course.

Peanut Butter Brownie Cookie Recipe

Brownie Mix Buckeye Cookies

Brownie Mix Buckeye Cookies

Yield: 19 cookies
Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 35 minutes

Basically an easy way to make Buckeyes in a cookie form but just as satisfying and using a short cut of brownie mix.

Ingredients

  • 1 pkg 19.5 oz brownie Mix, (traditional is best)
  • 1/4 cup Butter Flavor Crisco or salted butter, melted
  • 4 oz cream cheese, softened
  • 1 large egg
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1/2 can chocolate Frosting, from 16 oz can or 3/4 cup of chocolate chips melted

Instructions

  1. Preheat oven to 350' F. In medium bowl mix brownie mix, melted Crisco, cream cheese, and egg for 50 strokes until well blended. (Will be a sticky dough)
  2. Drop 19-24 rounded tablespoons of dough 2 inches apart onto parchment lined cookie sheets
  3. In a small bowl, mix powdered sugar and peanut butter until mixture forms a ball. With hands or cookie scoop, roll rounded teaspoons of peanut butter mixture into 19-24 balls.
  4. Bake for 10-14 minutes or until edges of cookie are set. Cool 1 minute, remove from cookie sheets.
  5. Lightly press 1 Peanut Butter ball into each ball of cookie after they are baked.
  6. Cool at least 30 minutes and frost the peanut butter portion of each cookie

Notes

You can either bake them with or without the peanut butter ball. Be sure to cover the entire peanut butter ball with the melted chocolate or frosting.
