St. Patrick’s Day Dessert Recipe: Irish Creme Swirled Brownies

So many of you know I am not Irish only married to an Irish man and have some Italian-Irish children. Talk about clashing of fiery personalities!! I am wondering if the leprechauns are out after me because everything I tried to do this week in preparation for an surprise Irish Dinner for the family, things have gone array. St. Patrick’s Day Dessert Recipe:  Irish Creme Swirled Brownies

First I was unloading my car from my trip to Trader Joe’s, where I received my inspiration for the meal. They really marketed that well. I opened my trunk and boom the 6 pack of Harpoon Beer crashed onto the driveway. Only 2 bottles were saved. Why couldn’t it have been the corned beef?

Secondly, when I stopped by the grocery store to pick up a few items for this recipe I forgot to buy some new beer. I asked the cashier if I could leave my bag of paid groceries at the check out and come back with my beer. When I came back someone had taken the bag….

Last but not least, or at least I hope so…I made my first batch of the Irish Cream Swirled Brownies last night. I had them on the counter to cool. I came back and they were gone. One guilty Golden retriever panting about her acquisition. I am sure she will be paying for that all day….

So here I am attempt #2 at this super easy and great last minute St. Patrick’s Day Dessert. The second one did not come out as great, at least the swirl topping was not even evident… 

I guess this is punishment for all the tricks I have played on my kids each St. Patrick’s Day. This year the Leprechauns trap is definitely going out and I may make another one outside just in case!! I want to catch this menace.

I regress I made these super easy brownies also using a new product from Reynolds, the pan lining paper. This is not a required post for my contest, but I really wanted to share this with you. To see how to use Pan Lining Paper Paper properly check out this Video. It made clean up a breeze and cutting even easier. The only tip I have is be careful covering a metal pan, the sharp corners can cause the paper to tear.

Irish Cream Swirled Brownies Recipe

  • 1 package (family-size) fudge brownie mix ( I used dark chocolate) and prepared the fudgy recipe.
  • 1 teaspoon Pure Vanilla Extract
  • 1 package (8 ounces) cream cheese, softened (you can always put in micowave for 30 seconds if you forget to put it out)
  • 1/4 cup sugar
  • 2 tablespoons flour
  • 1/4 cup Irish cream liqueur or Torani syrup which I used
  • 1 egg

Directions

 
  • Prepare brownie mix as directed on package, adding vanilla. Reserve 1/2 cup batter. Spread remaining batter in greased 9-inch square baking pan or one lined in foil or pan lining paper
  • Beat cream cheese, flour and sugar in medium bowl with electric mixer on medium speed until smooth. Add Irish cream liqueur or syrup and egg. beat until well blended. Pour over brownie layer in pan. Drop reserved 1/2 cup batter by spoonfuls over cream cheese layer. Cut through batter with knife several times for marble effect.
  • Bake as directed on package for 9-inch square baking pan. Cool in pan on wire rack. Cut into squares.
