All opinions expressed are 100% my own. Patrick Day is approaching and the kids will be in school, or so we hope and I was thinking of fun and healthy lunch ideas to put in their lunch box. I was inspired from one of my food blogger friends, Angel from Angel’s Homestead and her Shamrock Pizza idea.
These are super easy to make and can really be topped with anything your family will enjoy. I have made quessidillas for my kids lunches before and not sure why I never thought about pizzas. I have purchased the pizza bagels in the frozen section before but like to know exactly what I am serving my kids with fresh ingredients.
Simply lay the Thomas Bagel Thins onto a cookie sheet and preheat your oven to 400 Degrees.
Coat each side with your favorite pizza sauce.
Then cover each bagel with a sliced piece of Mozeralla. I found this was less messy than shredded cheese. Add your toppings of choice.
For the pepper shamrock, we just sliced a green pepper thinly and then used a little piece for the stem.
Bake for 10-15 minutes but be sure to check for your preferred doness. You are really just looking for the cheese to be melted to your satisfiaction. We like it to be a little browned.
Enjoy these pizza bagels for a healthy lunch, after school snack or even as a side dish to a bowl of soup.
