This recipe can be halved as well if you don’t plan on serving a crowd, but you might as well make the whole batch as everyone will love them. You can even substitute different berries or mix them up for a flavorful crumb bar. Anything goes in the summer in my opinion when you just can’t decide on what fruit to use.

Strawberry Crumb Bars Recipe

(this recipe can easily be halved and put in a square baking pan)
  • 1/2 c white sugar
  • 1/2 c brown sugar
  • 1 teaspoon baking powder
  • 3 cups all-purpose flour
  • 1 cup Butter
  • 1 egg
  • 1/4 teaspoon salt
  • 1 tsp vanilla
  • 1 pinch ground cinnamon
  • 4 cups fresh Strawberries
  • 1/2 cup white sugar
  • 3 teaspoons cornstarch

Springtime Strawberry Crumb Bars Recipe

Cook Time: 45 minutes
Total Time: 55 minutes

A simple spring recipe strawberry crumble bars are great to take to a picnic or potluck dessert idea.

Ingredients

  • 1/2 c white sugar
  • 1/2 c brown sugar
  • 1 teaspoon baking powder
  • 3 cups all-purpose flour
  • 1 cup Butter
  • 1 egg
  • 1/4 teaspoon salt
  • 1 tsp vanilla
  • 1 pinch ground cinnamon
  • 4 cups fresh Strawberries
  • 1/2 cup white sugar
  • 3 teaspoons cornstarch

Instructions

  1. Preheat the oven to 375 degrees F . Grease a 9x13 inch pan.
  2. .In a medium bowl, stir together 1 cup sugar, 3 cups flour, and baking powder. Mix in salt and cinnamon, if desired. Use a fork or pastry cutter to blend in the butter and egg. Dough will be crumbly. Pat half of dough into the prepared pan.
  3. In another bowl, stir together the sugar and cornstarch. Gently mix in the Strawberry. Sprinkle the Strawberry mixture evenly over the crust. Crumble remaining dough over the berry layer.
  4. Bake in preheated oven for 45 minutes, or until top is slightly brown. Cool completely before cutting into squares.
