Spring in Central Virginia is quite erratic, we can have 70-degree days and then down to 50 degrees. The flowers will bloom one day and freeze the next. Earth Day is a great reminder to check on our gardens the prepare them for the growing season. Despite the crazy weather, my herb garden is not affected but it is time to buy annual herbs/. In fact I checked on it the other day and many of my herbs have started sprouting their spring leaves and are ready to be used in the kitchen. These beautiful green leaves add so much dimension to even the easiest of recipes.
Two Spring Herb Garden Inspired Snacks
While I was running errands at Target, I saw this adorable RITZ Cracker box and it truly inspired me to use my fresh herbs and make some Spring Herb Garden Inspired Appetizers that could not be easier and the kids might enjoy them for an after school snack as well. You can get most of what you need at Target stores that have a grocery section!
What you will need for the herbed cheese and tomato snack:
- RITZ Crackers
- Herbed cheese or herbed cream cheese
- Grape Tomatoes- Halved
- Fresh Basil leaves
Simply slather a generous layer of the herbed cheese on top of your RITZ Cracker.
Add a small piece of fresh basil on top of the cheese layer.
Top each RITZ Cracker with a halved cherry tomato, any color will do.
Place on a plate and watch your friends gobble up springiness in one simple bite.
The next snack recipe was inspired from RITZ cracker recipes for Strawberry Chocolate Mousse Topper and I adapted it for my family’s liking.
What you will need for the Chocolate Berry Snack.

- Plain Cream Cheese
- Chocolate Hazelnut Spread
- Sliced Strawberries or small Blackberries
- Fresh Mint leaves
Mix a 1 for 1 ratio of plain cream cheese and chocolate hazelnut spread until a creamy mixture.
Layer a generous amount of spread onto a RITZ Cracker.
Top it off with a piece of strawberry or blackberry and a sliver of fresh mint.
A great after school or spring tea party snack.
