When I was looking for some fun new Easter treats on Pinterest last week, I found those cute Oreo chicks I made for my son’s teacher’s kids. I also found Easter themed macaroons to make for the adults.
I found these macaroons on Pinterest, and although I love Nutella per the original recipe, I knew I could not use that for the middle since these needed to be packaged. I decided I needed a hardened chocolate center instead. I simply melted some chocolate chips with some shortening in the microwave until smooth.
I then let it cool slightly so it would not run all the way down the cookie. I spooned some chocolate into the centers of the macrons and then added the Easter candy. The kids can really make these simple cookies and they can especially help with the decorating.
I also thought I would make some grass for some of them. I colored the some coconut green and sprinkled a little on a few cookies. I also made a little batch, since the recipe does not call for a full can of milk so I halved the recipe and made some green macaroons. Cute but a true nest is brown.
Also another tip when making macaroons is to use a ice cream scoop to get even cookies. The recipe suggests 3 tablespoons but this way it is all in one scoop and you don’t have to get your fingers dirty in the process.
Also when packaging them, use a piece of wax paper in-between the layers so they don’t stick to one another.
