Thank you so much for the awesome comments from the last post. I am so glad you guys loved the recipe. I try to post a new recipe every other week but I can make an exception this week because I have a great Easter recipe that I want to share. This recipe is a family recipe from my dad’s side of the family. My dad and I baked an amazing and cute Easter Bunny Cake. Looks like I had a busy baking weekend with the extra snow day.
First we got out a box of yellow cake mix and simply followed the instructions on the box for two 9 inch pans. After we made the batter we took out two circular pans. After the cake has baked and cooled, we wrapped a cooking sheet in Reynolds aluminum foil.
Then we cut one of the cakes edges to turn them into ears for the bunny. Then there should be a bow tie like shape in the middle. You could use it as a bow tie for the bunny like we did. Then arrange the bunny on the foiled-wrapped cooking sheet.
Then frost the cake any way you want. My dad and I used chocolate frosting. We frosted everything the same color. Sort of looks like a solid chocolate bunny!
Next is decoration time. Be creative. I used coconut, jelly beans, sprinkles, left over valentines candy, white cookie frosting, and more. Since we did not have vanilla frosting, I used the white coconut for contrast on the bow tie.
There is only one step left to do which is to serve the cake. The cake was a big hit in my family and I bet it would be the same for you too. The hardest part was deciding where to cut first!
