Skillet Desserts are super fun and easy to make.  They are a great centerpiece at your table as well.  People just love the idea of a dessert made in a skillet and baked to perfection. Check out our Cast Iron Chocolate Chip Cookie as an example.

I just can’t get enough of all the summer fruits available right now.  I can eat them fresh or baked in amazing desserts like a Peach Cobbler.  We thought we would mix things up a bit and make this in a skillet.

Blueberries and Peaches are the perfect compliments and both are just as amazing cooked as they are fresh.  Since we went blueberry picking this week, I had to include them in our peach cobbler. 

Once you have made the fruit filling, you can set it aside and quickly put the crust together as your oven preheats. adding cobbler crust into a skillet

The crust is a simple mixture to make, just be sure you have extra flour as the dough did stick to my rolling pin.

Add your filling on top of the dough.

Fold over an excess dough but be sure to leave the middle open.  A similar method to a Crostada.

Adamant it is not cast iron; it has an unusually tough nonstick sealing, with silicon carbide particles that make the surface hard like stone.  Silicon carbide is both the lightest and hardest ceramic material, with excellent thermal conductivity.  You can use metal utensils. 

 

Allow it to cool slightly then serve ala mode if desired. Serve Warm,  Room temperature, or out of the fridge if you have leftovers.

This peach blueberry cobbler was not only an easy dessert recipe but I just love the presentation of it being served in the skillet it was made in. 

What You Need to Make a Skillet CRUST

  • 1 cup all purpose flour
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons cold unsalted butter, cut into small cubes
  • 1/3 – 1/2 cup low fat milk

FILLING for a peach cobbler

  • 4 peaches (approximately 3 cups) peeled and sliced
  • 1 cup of Blueberries
  • 1/3 cup granulated sugar
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Pinch of salt
  • 1/2 teaspoon vanilla extract
 
This recipe is just a method. Mix up the fruit combination to whatever fits your taste buds.

Skillet Blueberry Peach Cobbler is the perfect summer recipe.

Ingredients

  • FOR CRUST
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons cold unsalted butter, cut into small cubes
  • 1/3 - 1/2 cup milk
  • FILLING
  • 4 peaches (approximately 3 cups) peeled and sliced
  • 1 cup of Blueberries
  • 1/3 cup granulated sugar
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Pinch of salt
  • 1/2 teaspoon vanilla extract

Instructions



Filling

1. In a large bowl combine all of the ingredients for the filling and stir together gently until combined

2. Set aside and make the crust.

Crust

1. Preheat oven to 425° F. Spray a 9-inch ovenproof skillet with cooking spray

2. In another bowl combine the flour, sugar, baking powder, cinnamon, and salt. Add in the cold cubes of butter and work them into the flour with your fingers until everything comes together and resembles breadcrumbs.


Start with 1/3 cup of milk and pour it into the mixture stirring together quickly and gently until the dough comes together. Add tsp at a time until the dough comes together easily.

On a lightly floured surface, roll the dough out until it's about 1/4 inch thick circle. Place it into the prepared skillet allowing the dough to hang over the edges.


Fill the crust with the peach blueberry mixture and fold the hanging dough towards the center leaving the middle uncovered.

Brush the crust with milk and sprinkle with sugar. Bake for 25-30 minutes or until the crust is golden brown.

Cool for 10 minutes before serving with vanilla ice cream

Notes


Add additional sugar to the fruit mixture if your fruit is tart.
