Barefoot Contessa Pot Roast Recipe

I will tell you I have never made a pot roast before. I sent my husband to the butcher with the meat selection and when I was ready to make it I was not sure how to tie it. Also it looked a lot thinner than the picture in the cookbook.
Needless to say I was going to make it.

There are a lot of good veggies in this recipe. I found that if you have a sink cutting board, placing a plastic shopping bag underneath works great for catching scraps. It provides easy clean up for the trash or right to the compost.
After 1 1/2 hrs I took the temp and it was 180, the recipe suggests after 2 1/2 hrs at 160 take it out. My husband thought it was good, the kids only ate the egg noodles I made as a side dish and a little meat that did not have the sauce.
A friend of mine did make it once and said it was great. I might try again and make sure I have the right cut of beef.
