Best Easter Cookies–Cut out Bunnies

I am not ashamed to admit that I usually make sugar cookies with a mix. I will not touch the refrigerated slice and bake due to the after tasted of these. However, I was feeling inspired one afternoon and decided to make some Cut Out Cookies for Easter and from scratch.

Here are my little Easter Bunny Cookies…

My husband is still asking me how I made those cookies. What mix did I use. They were replicates of cookie bouquet cookies. Thick and soft but still flavorful. I might add a little lemon or orangeextract just for a little difference next time.

The hardest thing about this recipe is the waiting. I mean waiting for the dough to be cooled enough to roll and cut them out.

I rolled the sugar cookie dough on Parchment Paper, and then they were very easy to pull off and place on another cookie sheet.

I usually freeze my cut out cookies once they have cooled and frost them at a later time, but  I wanted to surprise the family with these cute bunny cookies so frosted them and then froze the cookies for a later date. Just separate the cookies in between parchment paper

This worked out great. Not ideal to freeze the frosting, I used the Wilton Cookie Frosting I found for $1 for a 3 pack of Christmas Colors. Clearance section at Bed Bath and Beyond. DEAL!!

With the leftover cookie dough scraps, I simply dipped 1 inch balls into colored sugar and baked them for treats to eat that night.

This recipe is definitely a keeper. I need some work on my cookie decorating skills. What do you use to decorate your cookies?



Amazing Sugar Cookie recipe for Cut out Cookies

  •  1 1/2 cups butter, softened
  •  2 cups white sugar
  •  4 eggs
  •  1 teaspoon vanilla extract
  •  5 cups all-purpose flour
  •  2 teaspoons baking powder
  •  1 teaspoon salt

Directions

In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
Bake 6 to 8 minutes in preheated oven. Cool completely.

  12. Since I live alone I do not make homemade cookies–mainly because I would probably eat them all at one sitting!! These are adorable-I think you did a super job decorating them (better then I could do!)
