Irresistibly Easy Chocolate Chip Cookie Bundt Cake Recipe

There is nothing better than a mid-day pick up of a slice of yummy cake and a good cup of coffee.  This week I  wanted to bake something and having only a yellow cake mix and a limited amount of time, we decided to upgrade a box cake mix.

I had all the ingredients, including the vanilla pudding which is a great addition to any box cake mix.

Since I was using my traditional bundt pan for monkey bread , I used a fun “fancy flower” bundt pan to make this Chocolate Chip Cookie Cake.

WHY DO I ADD PUDDING TO A BOXED CAKE MIX?

  1. Moisture: Pudding mix contains ingredients like starch and sugars that can help retain moisture in the cake. This added moisture can prevent the cake from drying out, resulting in a softer and more tender texture.
  2. Flavor: Pudding mix comes in various flavors, such as vanilla, chocolate, butterscotch, and more. The batter is pretty thick with the extra eggs and pudding addition so don’t get worried about that.

WHAT TYPE OF GLAZE IS GOOD FOR A BUNDT CAKE RECIPE?

While I would only make the vanilla or chocolate glaze but here are some simple ideas to enhance your bundt cake and to make it look extra special: 

  1. Classic Vanilla Glaze:
    • Ingredients:
      • 1 cup powdered sugar
      • 2 tablespoons milk
      • 1/2 teaspoon vanilla extract
  2. Chocolate Ganache Glaze:
    • Ingredients:
      • 1/2 cup heavy cream
      • 1 cup semisweet chocolate chips
      1.  
  3. Lemon Glaze:
    • Ingredients:
      • 1 cup powdered sugar
      • 2 tablespoons fresh lemon juice
      • 1 teaspoon lemon zest
  4. Coffee-Chocolate Glaze:
    • Ingredients:
      • 1 cup powdered sugar
      • 2 tablespoons brewed coffee, cooled
      • 2 tablespoons cocoa powder

SHOULD I GLAZE MY BUNDT CAKE WHILE IT IS WARM?

Allow the cake to cool completely then you can make a simple glaze using a creamer instead of milk.  Using a vanilla creamer made a flavorful yet simple glaze in minutes.

What you need for this CAKE MIX REDO: 

  • 1 pkg Yellow Cake Mix 
  • 1 (3.4 oz) pkg vanilla instant pudding and pie filling 
  • 4 large eggs
  •  1 cup water 
  • 1/3 cup vegetable oil
  •  1 (12 oz) pkg semi-sweet chocolate chips 
  • 1 1/2 cups finely chopped pecans 
  • 2 tablespoons Vanilla flavored creamer or milk plus 1/2 tsp vanilla
  • 1/2 Cup confectioners’ sugar

Transform a basic cake mix into this chocolate chip cookie cake in minutes to get this amazing gourmet bundt cake

Ingredients

  • 1 pkg Yellow Cake Mix 
  • 1 (3.4 oz) pkg vanilla instant pudding and pie filling 
  • 4 large eggs
  •  1 cup water 
  • 1/3 cup vegetable oil
  •  1 (12 oz) pkg semi-sweet chocolate chips 
  • 1 1/2 cups finely chopped pecans 
  • 2 tablespoons Vanilla Coffee Creamer or half and half
  • 1/2 Cup confectioners' sugar

Instructions

  1. Preheat oven to 350ºF.
  2. Grease and flour 10-inch Bundt®® pan.
  3. Combine cake mix, pudding mix, eggs, water and oil in large mixing bowl. Beat at medium speed with electric mixer for 2 minutes.
  4. Stir in chips and pecans
  5. . Pour into prepared pan.
  6. Bake 50 to 60 minutes or until toothpick inserted in center comes out clean.
  7. Cool in pan 25 minutes. Invert onto serving plate. Cool completely.
  8. Mix Creamer and Confectioners sugar together to make a pourable glaze. If too runny add more sugar if too thick add more creamer.
