What are the best apples for caramel?
I think red apples are best for candying: gala, fuji, cameo, pink lady, Jonathans. For caramel apples, the Granny Smith is the ultimate in my book, but Golden Delicious and Jonagold work well if tartness isn’t your thing.

How to Make Gourmet Caramel Apples at Home
Caramel for Apple Dipping
- Wash & dry the apples, making sure to remove any wax and remove the stems.
- Insert the caramel apple sticks into the apples. If juice drips from apple, wipe dry.
- Melt the Chocoley Caramel on low heat until it reaches 170° F. You can use a microwave, on low heat for short periods being very careful not to overheat.
- Dip each apple into the melted caramel.
- Set on a greased cookie sheet in the fridge to cool (about 15 min).
Melt chocolate according to instructions that came with your Chocoley chocolate. We melted ours in candy piping bags.
Once the Caramel has cooled & hardened, you can dip the apples in your chocolate, covering the caramel with as much chocolate as desired or simply piping the chocolate over the caramel.
Our Exchange student added some candy before the chocolate set.
WORK QUICKLY AND IN SMALL BATCHES!
If drizzle or piped lines are desired: After the chocolate has set, melt the chocolate you want to drizzle or pipe over your apple. Remove apples from the fridge, add chocolate drizzle or piping, and return to the fridge to set.
(If you want multiple flavors of drizzle or piping like in the photo, ideally let the chocolate set in between drizzling each flavor).
Seal in an airtight container until ready to serve. Store at room temperature in low humidity.
