My kids really like the Lofthouse Cookie at the store, and this was the closest recipe I could find. This was the first recipe I made after my ACL surgery. Since I was downgraded to only one crutch, why not make cookies?
I know I can’t stay out of the kitchen sometimes and my kid were coming back from a week at my mom’s house. Lofthouse cookies have a distinct taste to them and they are a great frosted sugar cookies that can be made for any holiday or occasion by changing the sprinkles or frosting colors.
My kids always love these cookies because they are soft, tender and topped with super sweet buttercream and sprinkles. Basically a kid’s dream come true.

Copycat Lofthouse cookies
Copycat Lofthouse cookies perfect butter cookies with a light frosting
Ingredients
- 1/2 cup butter, softened
- 1/2 cup Sour Cream
- 1 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 3 cups flour
- 3/4 tsp baking powder
- 1/2 tsp Baking soda
- 1/2 tsp salt
- FROSTING
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 2-3 TB milk
- green food coloring, optional
- Sprinkles
Instructions
- In a large bowl of a mixer, cream butter until light and fluffy. Add sugar. Beat in egg and vanilla.
- Combine the flour, baking powder, and salt; add to creamed mixture and mix well. Form dough into 1/2-1" balls and place on cookie sheets. Flatten with the bottom of a glass dipped in flour.
- Bake at 375 degrees for 6-8 minutes or until set but not brown. Cool on wire racks.
- For the frosting, cream butter. Add powdered sugar and vanilla; it will be very stiff. Add 3-4 tablespoons of milk, 1 tablespoon at a time until spreading consistency is reached. Add food coloring to a portion or all of frosting if desired. Frost cookies.

I was attracted to the sour cream in the cookies. I love cookies with cream cheese or sour cream added to them. These sound delicious!
I know these are copycat cookies but they look better than the real deal! The green color is perfect for St. Patrick’s Day too. Yum!
