Pumpkin Chocolate Chip Cookie Recipe

If you missed my recent pumpkin recipe round up be sure and check out all the mouth-watering pumpkin recipes here. Since that post, I have made these most delicious and moist pumpkin chocolate chip cookies.

I was a little nervous about my kids not wanting to eat them, but they actually really enjoyed them, as did my husband who loves his chocolate chip cookies.

Since pumpkin is so good for you, I wonder if next time I decide to add some oatmeal as well to make this a semi-healthy cookie recipe. Hey use dark chocolate instead of semi-sweet and you have really pushed the healthy cookie bar up!!

I used Ghiradelli Brand Semi-sweet chips. I think they taste closer to dark chocolate.

Pumpkin Chocolate Chip Cookie Recipe

Pumpkin Chocolate Chip Cookie Recipe

Yield: 3 dozen
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Pumpkin cookies with chocolate chips

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup (1 stick) butter, room temperature
  • 1/2 cup brown sugar
  • 3/4 cup granulated sugar
  • 3/4 cup 100% Pure Pumpkin
  • 1 Tbs Pumpkin Pie Spice
  • 1 1/2 teaspoons vanilla extract
  • 1 large egg
  • 2 cups Semi-Sweet Chocolate Morsels

Instructions

    1. PREHEAT oven to 375° F.
    2. COMBINE flour, baking soda, spices and salt in medium bowl. Beat butter, brown sugar and granulated sugar in large mixer bowl with electric mixer on medium until well blended. Add pumpkin, egg and vanilla extract. Mix on low until combined.
    3. Stir in flour mixture. Batter will be soft.
    4. Fold in morsels. Drop by tablespoon onto ungreased baking sheets about 2 inches apart.
    5. BAKE for 10 to 12 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Store in airtight container.
