CHICKEN AND RICE RECIPE
Things You’ll Need:
- boneless skinless chicken breast
- plain rice
- cream of chicken (or mushroom or both) soup
- chicken broth
- salt and pepper
- garlic (optional)
- vegetable oil
While a small amount of oil is heating in a sauté pan, season chicken with salt, pepper, and garlic. Vegetable oil is better for searing meat because other oils, like olive oil, have to low of a smoke point so you can’t get a nice dark sear on your meat.
When oil is hot enough, sear chicken on both sides, and lower heat and simmer in chicken broth until cooked through. Make sure not to cook at too high of heat or chicken will get too tough.
While the chicken is cooking, prepare equal amounts of rice and soups in a glass baking dish. Use what ever size will hold enough to feed your family.
Make sure rice is even throughout dish and place chicken on top. pour some of the cooking liquid over top.
Bake, covered with foil, 40 mins, or until rice is soft. serve hot with vegetables.
Tips & Warnings
- I like to make this a little different each time, by adding veggies into the rice, or sprinkling stove top or cheese on top. Cheddar soup works well also.
- This is always a big hit with the kids and I don’t have to fight about finishing dinner!
