Black Bean Salad with Avocado & Lime Dressing

There are a billion Black Bean salad recipes out there.  Everyone I know has their own version, especially with corn in the recipe.  We love this Black Bean corn and feta salsa recipe and think you will too. 

What we love about this black bean salad is that you can make it all year round using frozen corn, but why not take advantage of fresh produce of summer and use fresh corn. In fact, we used leftover corn from a night we made too much.

Black Bean Salad with Avocado & Lime Dressing

We loved this so much my daughter made it one day when we were having company and I decided to make it a few days later because it was soooo good.  While we have been eating Keto recently, so this sort of wrecks the low carb meal plan but so worth it.  

What you need for this Black Bean Salad with Avocado & Lime Dressing Salad:

  • 2 15-ounce cans black beans, rinsed and drained
  • 3 Ears freshly cooked corn, kernels cut off the cob
  • 2  bell peppers, diced (Any Color Works)
  • 2 cloves garlic, minced
  • 2 tablespoons minced shallots
  • 2 teaspoons Kosher salt
  •  2 Jalapeno Peppers, Diced
  • 2 tablespoons sugar
  • 9 tablespoons extra virgin olive oil
  • 1 teaspoon lime zest
  • 6 tablespoons fresh lime juice
  • 1/2 cup chopped fresh cilantro, plus more for garnish
  • 2 Avocados, chopped. (Save for serving )

Some folks don’t care for Cilantro so you can also use parsley in this recipe for a different flavor profile.  

The dressing is what makes this a little different from our other Corn & Black Bean salad.

Can I use frozen corn in a salad?

If you defrost the corn you could probably use frozen corn.  However, I believe leftover fresh corn is the best in a fresh salad.

Black Bean Salad with Avocado & Lime Dressing is the perfect make ahead recipe using fresh corn.

Ingredients

  • 2 15-ounce cans black beans, rinsed and drained
  • 3 ears fresh cooked corn, kernels cut off the cob
  • 2 red or yellow bell peppers, diced
  • 2 cloves garlic, minced
  • 2 tablespoons minced shallots
  • 2 teaspoons salt
  • 1/4 teaspoon cayenne pepper or 2 Jalapeno peppers
  • 2 tablespoons sugar
  • 9 tablespoons extra virgin olive oil
  • 1 teaspoon lime zest
  • 6 tablespoons fresh lime juice
  • 1/2 cup chopped fresh cilantro, plus more for garnish
  • 2 large avocados, chopped

Instructions

    1. Combine all ingredients except for avocados in a large bowl and mix well.
    2. Cover and chill for a few hours or overnight. Stirring once or twice to spread dressing
    3. One Hour Before serving take out of fridge and allow to come to room temperature.
    4. At Serving Time: add avocados and mix gently, being Sure to cover with dressing and not mash the avocado. . Garnish with a more chopped cilantro if desired.
