I have been going to the same Blueberry farm since my daughter was in a baby Bjorn, she is now 12 years old. There is something about picking fruit from a bush that makes it so much better.

I did think that having 3 grown kids with me would make the process go quicker, but it seems as they get older they have become less interested. I only brought home 5 pounds of blueberries this year so I will have to make a trip out again.

I only had light mayonnaise so it may help with calories too. LOL>

Just pour your freshly washed blueberries or other fruit combos in your pan, I chose to make ours in a pie pan.

Crisps always include whole oats AND held together with a mixture of flour, sugar, and butter OR IN THIS CASE MAYO and bake up into crisp and tender pastry.

Mix your toppings in a separate bowl. Pretty basic right?

Now it is time to add your secret ingredient, mayo? I mean really who would have thought. Since you can substitute Greek yogurt for mayo I wonder if you can do the same in the recipe.

WHAT IS THE BEST WAY TO EAT A BLUEBERRY CRISP?

SERVE THIS BABY WARM OR AT ROOM TEMP.  I prefer it a little warm out of the oven, and it makes that vanilla ice cream melt so perfectly.

Ingredients

  • 4 cups fresh blueberries, washed
  • 1 cup all-purpose flour
  • 3/4 cup white sugar or half Brown Sugar
  • 1/4 cup of Quick or regular oats
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup mayonnaise

Instructions

  1. . Preheat the oven to 350 degrees F (175 degrees C).
  2. 2. Place the blueberries into an 8 inch square baking dish. In a medium bowl, stir together the flour, sugar, and cinnamon. Stir in the mayonnaise until the mixture resembles coarse crumbs. Sprinkle over the top of the berries.
  3. 3. Bake for 35 to 40 minutes in the preheated oven, until the top is lightly browned.
