Our family eats sausage and peppers at least twice a month. I serve it in a roll, sometimes just cut up and sautéed with mixed bell peppers. I love serving lower fat Italian turkey sausage as well. It has the same great flavor with less fat. So when I was looking for easy dinner ideas when school started, I looked into my fridge and found Italian Turkey Sausage links, red and yellow bell peppers, onions and a canister of ready to bake crescent rolls. (Ready to bake Bread sticks would work very well too) Thinking about how much kids love kebabs and food on sticks, I thought I would try one of our favorites in a new way.
Sausage rolls are so bready that I end up throwing out half the roll anyway. The idea of baking the bread right into the sausage and peppers seemed ideal. Plus there is less to clean up since you are baking them on a baking sheet.
Simply cut up your sausage links into 6-8 slices. (depends how large your sausage is but 1 inch pieces)
Cut up bell peppers and onions into small bite size pieces. About 1 inch square/ rectangles.
Roll out your crescent rolls or bread sticks. If using crescent rolls take four and connect the pieces by pinching them slightly. Then cut out 4 long strips.
Weave 4 pieces of sausage, the crescent rolls and onion onto a small skewer. Place on a baking tray covered with parchment paper.
Bake for 15 – 20 minutes at 375 degrees until the sausage is cooked.
Meanwhile, make the sriracha dipping sauce. Mix Stubb’s Texas Sriracha Anytime Sauce with Greek Yogurt until desired flavor. The Texas Sriracha Anytime Sauce is a flavor-packed blend of chili peppers, garlic, and cane sugar that makes it both spicy and sweet. But be sure to serve it on the side as it can be too spicy for some.
Plate these up for a great tailgating snack or easy dinner recipes. It’s a fun way to eat an old favorite. Make them with only 2 pieces of Sausage for an easy appetizer!
