Either you love or you hate beets. You can buy them pickled or roasted in a grocery story, but why would you ever buy them when you can learn how to roast beets for salad in no time.
As the only one who really loves beets in my family, I picked a roasted beets salad for my birthday dinner.
How to Roast Beets for A Salad
Roasting beets is simple but it can be messy with the beet juice. I would recommend having some disposable gloves when handling the finished product.
Organic Beets are so beautiful and if you can get a variety of colors your salad or dish will pop even more.
What do I do with Beet Greens
I have thrown them away for years, especially if they are limp by the time I am ready to use the beets. Don’t throw away the greens, you can cut them off and place in a glass of water and there is a good chance they will perk back up.
We followed this recipe for beet greens and they were quite tasty.
How To Make Beets in the Oven
Simply cut off the ends and tops of the greens and wash off any residual dirt. No need to dry them off.
If they are on the larger size, I would loosely wrap each beet individually in tinfoil. Some people rub a little olive oil on each beet but put them straight into the oven.
Smaller beets can be wrapped together.
Roast them in an oven at 400 Degrees.
Place the wrapped beets on a rimmed baking sheet to catch drips in case the beet juices leak. Roast for 50 to 60 minutes. Check the beets every 20 minutes or so.
If they are starting to look dry or are scorching on the bottoms, dribble a tablespoon of water over the beets before re-wrapping. Beets are done when a fork or skewer slides easily to the center of the beet.
Small beets will cook more quickly than large beets so be sure to check on them.
HOW TO PEEL BEETS
Set the beets aside until cool enough to handle. Hold one of the beets in a paper towel and use the edges of the paper to rub the skin away.
You might want to use latex gloves for this as you will likely have stained fingers as a result. The skin should peel away easily.
Slice them and store them in the fridge for up to a week.
