Who says you can’t have chocolate for breakfast? Ok, it may not be the healthiest but if you add dark chocolate, you are actually getting some benefits! We adapted a Double Chocolate Muffins Recipe to make it a little healthier and a great addition to your breakfast or after school snack. Muffins are so easy and take just about 20 minutes to bake. One key to good chocolate chip muffins is using good quality chocolate, like organic, gluten-free and fair trade chocolates from Alter Eco. These chocolate bars were a great addition to our chocolate muffin recipe. There is no doubt, this recipe is definitely going on our muffin recipe rotations.
Decadent Double Chocolate Muffins Recipe
We made a few adjustments to our muffin recipe to make it a little healthier.
Ranging from burnt caramel, quinoa stuffed, brown butter filled and many more, each silky smooth dark chocolate bar adds a subtle burst of flavor to any creation. Made with organic cacao hand harvested in the Peruvian Amazon and Ecuadorian Coast, each bar is finished by Swiss chocolatiers and are free of emulsifiers, artificial flavors and soy. The first step is turning your Chocolate bar into chips. If you can withstand not eating it all, you are better than me. I had to use two bars to get enough chips.
You also top the muffins with chocolate chunks, because these were not traditional chips, the chocolate turned into a frosting. I love the contrast of the bright cupcake liners too.

Double Chocolate Muffins
Double Chocolate Muffins are like dessert for breakfast
Ingredients
- 2 cups all-purpose flour or use half whole wheat flour
- 1 cup white sugar
- 3/4 cup chocolate chunks
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 tsp espresso powder
- 1/2 tsp salt
- 1 egg
- 1 cup plain Greek yogurt
- 1/2 cup low fat milk
- 1/2 cup vegetable oil
- 1/4 cup chocolate Chunks
Instructions
- Preheat oven to 400 degrees F. Grease 12 muffin cups or line with paper muffin liners. Cut your chocolate bar into chunks if using a bar.
- Combine flour, sugar, 3/4 cup chocolate chips, cocoa powder, espresso powder, salt and baking soda in a large bowl. Whisk egg, yogurt, milk, and vegetable oil in another bowl until smooth; pour into chocolate mixture and stir until batter is just blended. Fill prepared muffin cups 3/4 full and sprinkle with remaining 1/4 cup chocolate chunks.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
