Cake Mix Cookie Bars for Summer

There are so many fun Patriotic desserts out there, this super easy cake mix cookie bars are perfect for any summer outing. 

We made these patriotic cookie bars for my son’s send off to the USAFA a few weeks ago, and obviously they would be great for Memorial Day, Fourth of July and Labor Day desserts. 

Obviously you don’t have to use red, white and blue sprinkles and you can use any sprinkle you have on hand. 

We have made a few different cake mix bars like these double chocolate cake mix bars and sprinkle blondie cake mix bars.

Since we were going with red white and blue, we chose a white cake mix for our base of our simple cookie bars.

For a bit of chocolate flavor and additional white throughout our bars we added white chocolate chips.

WHY IS MY BATTER SO THICK? 

The batter of these blondie cake bars should be thick, otherwise you will have more of a cake bar,  I did this the first time. They will taste fine, but just very cakey.

We prefer these with a little cookie crunch. 

What you need to make Patriotic Funfetti Cake Mix Blondies

Can I freeze Cake Mix Blondies

Yes, we made them a few weeks before our event.  Allow the entire block of cookie to cool and then freeze in tact.

We wrapped it in tin foil and then placed it in a freezer bag. 

Allow the block to thaw almost all the way,  then cut.  If you are cutting smaller pieces it may be easier to cut it while it is still slightly frozen.

If you just want to eat slices and not serving to a crowd,  cut into individual slices, wrap and freeze.

Cake Mix Cookie Bars for Summer

Yield: 36 mini bars
Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes

A short cut to make blondies for any occasion. Funfetti blondies for patriotic bbq or fourth of July desert ida

Ingredients

  • 15 ounces yellow or white cake mix (15 oz box)
  • 1/4 cup vegetable oil
  • 3 tablespoons milk
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1/2 cup red white and blue jimmies
  • 1/2 cup white chocolate chips

Instructions

    Preheat your oven to 350 degrees F. Grease a 9-inch x 9-inch baking pan or line it with parchment paper and then set it aside.
    Mix together cake mix, vegetable oil, milk, egg, and vanilla extract in a large bowl. The batter should be well mixed but stiff. Mix in the sprinkles and white chocolate chips with a rubber spatula or wooden spoon. (Save some sprinkles for topping.)
    Transfer batter to the prepared baking pan and spread into an even layer with an offset spatula. Sprinkle the reserved sprinkles over the batter and press in lightly.
    Bake for 30 to 35 minutes until the toothpick comes clean from the center.
    Remove from the oven. Blondies should rest for a couple of hours before cutting into 12 large bars or 36 mini bars like we did for entertaining.
