Decadent Double Chocolate Muffins Recipe

Who says you can’t have chocolate for breakfast? Ok, it may not be the healthiest but if you add dark chocolate, you are actually getting some benefits! We adapted a Double Chocolate Muffins Recipe to make it a little healthier and a great addition to your breakfast or after school snack. Muffins are so easy and take just about 20 minutes to bake. One key to good chocolate chip muffins is using good quality chocolate, like organic, gluten-free and fair trade chocolates from Alter Eco. These chocolate bars were a great addition to our chocolate muffin recipe. There is no doubt, this recipe is definitely going on our muffin recipe rotations.

Ranging from burnt caramel, quinoa stuffed, brown butter filled and many more, each silky smooth dark chocolate bar adds a subtle burst of flavor to any creation. Made with organic cacao hand harvested in the Peruvian Amazon and Ecuadorian Coast, each bar is finished by Swiss chocolatiers and are free of emulsifiers, artificial flavors and soy. Like all Alter Eco products, the chocolates are USDA Certified Organic, Fair Trade Certified, Carbon Neutral Certified, Non-GMO Project Verified and Certified Gluten-Free.

The first step is turning your Chocolate bar into chips. If you can withstand not eating it all, you are better than me. I had to use two bars to get enough chips.

You also top the muffins with chocolate chunks, because these were not traditional chips, the chocolate turned into a frosting. I love the contrast of the bright cupcake liners too.
