Extra Easy Chocolate Chess Pie Recipe

What is so romantic about Chocolate? Who made it into such a big focus and gift for Valentine’s Day? Well no matter what time I year, I love anything chocolate.I have never heard of Chess Pie until I moved to Va.

In fact I have only had chess pie once since living in Va. A true southern dish I believe. The last time I made this pie was in 2012. Why have I waited so long to make it again, maybe because the first time it came out runny? Not this time.

This chocolate chess pie is a rich chocolate pie with a filling that resembles somewhere between a brownie and rich fudge.

Looking for a yummy dessert for a weeknight dinner a few weeks ago  Chocolate Chess pie fit the bill, especially since  “Extra easy” was in the title of the recipe. and I was looking for a quick dessert that I had most of the ingredients on hand.

Our freezer is usually stocked with a pie crust or two. So if I want to make a quick pie or quiche its readily available. So now the Midwest transplant was going to take on a southern Tradition.

The first time I made this easy chocolate chess pie,  I only had a deep dish pie crust in the freezer and the recipe only called for a pie crust. I was a little nervous when I poured the filling.

It seems pretty empty. However, it did puff up. I took out the pie per the directions, wish I know what I was looking for. This time I had a regular pie crust and it turned out perfectly. 

 

I think the key to a good chess pie is getting the eggs and the sugar to be nice and creamy. Allow them to mix for several minutes.

 

 

Also when melting your chocolate and butter mixture, only use half the stick to melt the chocolate. Take the pan off the heat and add the other half stick of butter. This will allow the mixture to cool off more quickly too.

Chocolate Chess Pie Recipe

Super Easy Chocolate Chess Pie Recipe

Yield: 8 Slices
Prep Time: 15 minutes
Cook Time: 35 minutes
Total Time: 50 minutes

This Super easy Chocolate Chess Pie is easy to put together and has a rich chocolate flavor

Ingredients

  • 2 - 1 oz squares of unsweetened baking chocolate
  • 1 stick of butter
  • 2 eggs
  • 1 cup of sugar
  • 1 tsp vanilla extract
  • 1 9 inch pie shell, unbaked
  • frozen whipped topping, make your own if you prefer

Instructions

  1. Preheat oven to 375 degrees
  2. Melt chocolate and half of the butter in a small saucepan or in the microwave. Add the second half of the butter and set aside. Stir until the butter is mostly melted.
  3. Beat eggs and sugar until light and fluffy.
  4. Combine cool chocolate and sugar mixtures. Stir in vanilla. Pour into pie shell.
  5. Bake 25 minutes.
  6. Serve with frozen or homemade whipped topping.
