Thanks to San-J for providing me with a promotional item to conduct this recipe. All opinions are 100% my own. We are not a gluten-free household but when I was tasked with using San-J sauces in something other than a marinade I was a little nervous but curious at the same time. San-J recently came out with some holiday themed recipes using their gluten-free sauces. I was totally intrigued by the Gluten-Free cake recipe: Chocolate Cherry Cake Recipe they had featured. I normally don’t enjoy cooked cherries, but hey it is worth a try.
Well the results were a success and the family loved it. I am not sure if mine was undercooked but it was gooey in the inside which made for a more decadent and almost lava like chocolate cake. I also purchased a 10 oz bag instead of the 12 oz since that is all my grocery store had and I think it was more than enough. (maybe I did not defrost the cherries long enough and thus the extra goodness?

Ok here is the quick and easy gluten-free cake recipe (although I used regular flour because almond flour was too expensive)
I did make a little of the ice cream with Tamari, no one really thought it was much different but I think it sets off the cake.

Holiday Recipes for a Gluten-Free Thanksgiving Dinner:
APPETIZER – Cranberry Orange Baked Brie: Baked brie topped with San-J Orange Sauce and cranberry sauce, decorated with chopped pistachios and served with San-J’s gluten-free crackers.
SALAD – Persimmon Goat Cheese Salad: Tossed green salad with San-J Tamari Ginger Salad Dressing, topped with persimmons, goat cheese, walnuts and pomegranate seeds.
SOUP – Pumpkin Coconut Soup with Thai Peanut: Blended pumpkin with coconut milk simmered with San-J Thai Peanut Sauce.
MAIN – Roasted Cornish Hens with Orange Teriyaki: Cornish hens marinated in San-J Teriyaki Sauce, orange juice, garlic and ginger, roasted to perfection.
SIDE – Szechaun Noodles: Chopped red peppers, onions and cabbage tossed in San-J’s Szechuan Sauce and sesame seeds.
DESSERT – Cherry Chocolate Cake: A delightful dairy free and gluten-free cherry chocolate cake flavored with San-J Tamari Soy Sauce, served with your choice of ice cream.
