Grilled Skirt Steak Tacos with Spicy Guacamole is a Rick Bayless recipe. If you have not heard of Rick, I was first introduced to him on FoodNetwork several years ago but he owns a few restaurants in Chicago that I have been to and has in the last couple of years started selling his products commercially in the grocery stores under Frontera Grill.
 
I digress, anyway, this was a quick and easy way to get dinner on the table. Plus there is really no clean up if you grill outside.

This was so easy and it smelled so great on the grill. I added some tomatoes to my guacamole for extra flavor and the kids added some shredded cheese to their tacos.

We used corn tortillas that I wrapped in tinfoil and placed on the grill to warm up. You could also grill them if you wish for more smokey flavoring.

Guacamole of course… I  did not make the guacamole very spicy so I eliminated the hot pepper for the kids.

 
This is just a fresh way to enjoy a Tex-Mex meal and take a break from the regular ground meat and taco seasoning meal.

Add a Margarita and it feels like you are enjoying a meal in Mexico.

Grilled Skirt Steak Tacos Recipe 

Grilled Skirt Steak Tacos with Spicy Guacamole

Change up taco tuesday this week with these Skirt Steak Tacos

Ingredients

  • 1-1/2 pounds skirt steak, trimmed skirt steak
  • 2 teaspoons chipotle chile powder
  • 12 warmed corn or flour tortillas
  • 1-1/2 teaspoons salt
  • 4 tablespoons fresh lime juice, divided
  • 3 tabelspoons vegetable oil
  • 2 avocados , halved, pitted and peeled
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno pepper, seeded, finely chopped

Instructions

    1. Rub the steak with chipotle powder and 1/2 teaspoon salt. In a large resealable plastic bag, mix 3 tablespoons of the lime juice and the oil. Add the steak, seal the bag and marinate 15 to 30 minutes.
    2. Meanwhile, in a medium bowl; mash the avocado with remaining 1 tablespoon lime juice, the cilantro, jalapeno, and 1 teaspoon salt. Cover and refrigerate.
    3. Heat grill to high. Just before serving, remove steaks and pat dry; discard marinade.
    4. Grill steaks to medium-rare, about 2 minutes per side. On a board, thinly slice the steak against the grain; serve on tortillas, topped with guacamole.
