Spring into Dinner with these Easy Dinner Recipes from Kroger

We are still waiting for spring around here. This is super late for central Virginia. March 25th was a snow day for our kids, even though the roads were totally clean… Spring in my house usually means sports start to pick up and getting time for a family dinner is almost impossible. We are always looking for healthy and quick food for dinner.

Think twice, thanks to BzzAgent and Kroger we were provided a semi homemade dinner ideas that was ready in less than an hour. Read on to see how easy it is to make a wholesome dinner that welcomes even the busiest family around the table. We are sharing our meal ideas and meal recipes with our grocery shop at Kroger.





   I love that dessert, a Bunny Cake made with our cake mix and frosting, was done as a daddy/ daughter project. You can find the directions on how to make the bunny cake here. Of course there are a lot more simpler recipes you can chose to make but since this was near Easter my husband wanted to share his favorite Easter Recipe memory with our daughter.


I have always purchased Kroger’s Pork. You can find other pork recipes on this post here and here.  In under 1 hour I had a dinner of roasted pork, asparagas, cresecent rolls, mash potatoes and cake. There is no reason you can not put that sort of food on the table for hungry kids. I will show you how we did it.

  I cooked the pork for 15 minutes, then added some asparagus with olive oil and salt and pepper to roast for 20 minutes. After 30 minutes of baking, I took basted to pork and added the crescent rolls. While the food rested, I microwaved the mashed potatoes. While we are not a big mashed potatoes family these were gobbled up. I did not even bother looking at the nutritional information….


Dinner is served and we are all seated at the table. I had some cut up watermelon just in case the kids would not eat the asparagus. The cakes were cooling during dinner and frosted when the rest of us cleaned up.

Next time you are dreading getting dinner on the table after a long day head over to Kroger and pick some great deals and options for a wholesome meal. I think you could serve this for an casual and easy dinner party menu. 

Apricot and Mustard Glazed Pork Roast Dinner 
Recipe adapted From Kroger
Ingredients
  • 2 tablespoons apricot preserves
  • 2 tablespoons Dijon mustard 
  • 3 garlic cloves
  • 1 tsp dried rosemary
  • 3/4 tsp salt
  • 1/4 teaspoon pepper
  • 2 lbs boneless pork loins
  • 1 lb asparagus tossed with 1 tablespoon olive oil and salt and pepper
  • 1 can of crescent rolls

Directions
  1. Preheat oven to 375. Line a baking sheet with parchment paper or foil.
  2. Mix apricot preserves, Dijon mustard set aside
  3. stir together garlic, rosemary, salt and pepper 
  4. rub over roast.
  5. Bake at 375 degrees for 15 minutes
  6. add asparagus to pan
  7. Bake for 15 more  minutes
  8. Brush reserved apricot-mustard mixture over pork roast. Put in crescent rolls
  9. Bake another 10 minutes.
  10. Remove from oven, tent with foil, and allow roast to rest 15 minutes before carving.
  11. serve with warmed mashed potatoes

  2. That looks like a lovely meal with the asparagus and pork! I will definitely be trying out this recipe. I think I would like these flavors together even though usually apricots are not my favorite.
