What to do with Leftover Pie Crust

I must admit I do not make my pie crusts from scratch, I bake 4 pies at Thanksgiving and I have never perfected it so why start on this busy holiday. This year I had to make 6 as I forgot to add the sugar to my pumpkin pies! This is why I start early I guess.

I do like to adorn my Pumpkin Pies with a little extra pie dough pieces shaped in pumpkins or turkeys. I have found more success in waiting until after the first 15 minutes to put these around your pie or they sink into the mixture.

I decided to roll them up and make a tasty treat for the kids and me to enjoy with some coffee before I start making the Thanksgiving Dinner Side Dishes.

What do you like to do with extra PIE DOUGH SCRAPS?

  • leftover pie crust dough
  • -softened butter
  • cinnamon
  • -sugar

Method

Preheat your oven to 350 degrees. Roll out the pie dough pretty thin. Shmear the dough with the softened butter. Sprinkle it generously with cinnamon and sugar. Roll it up tightly into a roll Put a little water on your fingertip, and seal the edge of the dough roll by barely wetting the edge and pressing it down. Slice into 1/3-in thick cookies. (Worked well using a serrated knife, and saw them). Place on a cookie sheet, and bake for about 15 minutes or until crispy and browned.
