Yogurt Lemon Bars Recipe

Our family loves lemon bars and we were looking for a way to make them a little more healthy.  By using whole wheat flour, natural sugar, and yogurt we came up with a creamer version of an old-time favorite.

We love all things Dannon.  Have you seen the new Dannon Yogurt packaging at Walmart?.  There are so many ways to use yogurt in things besides parfaits.  We bake with it a lot.

These are not your traditional lemon bars, instead they are more of a creamy almost cheesecake-like consistency made with Dannon Whole Milk Plain Yogurt!

Yogurt Lemon Bars Recipe

LOW FAT LEMON BAR CRUST

  • 1 cup white whole wheat flour
  • 1/3 cup unsalted butter, melted
  • 1/3 cup maple syrup 

FOR THE LEMON FILLING:

  • 3 large eggs
  • 1/3 cup Plain Whole Yogurt
  • 1/3 cup maple syrup or honey
  • 1/3 cup fresh lemon juice (from 2-3 lemons)
  • 1 tablespoon lemon zest
  • 2 tablespoons white whole wheat flour
  • 1/2 teaspoons vanilla
  • 1/4 teaspoon salt

 

INSTRUCTIONS

Preheat oven to 350. Line an 8×8 pan with aluminum foil and spray will nonstick spray.

In a small bowl, combine the flour, butter, and maple syrup. Stir until well combined.

Scoop the dough into the lined pan and use the back of a spoon to spread a thin layer along the entire surface.

Bake the crust at 350 for 15-20 minutes. Let cool for 10 minutes.

Meanwhile, combine all of the lemon filling ingredients in a medium bowl and whisk until smooth.

Pour the filling into the baked, slightly cooled crust.

Bake at 350 for 30 minutes, until set.

Let the lemon bars cool completely.  Lift the aluminum foil out and place it on cutting board. Use a sharp knife to cut the lemon bars into squares.  Store in fridge

When ready to serve sprinkle with confectionery sugar.

Lemon bars made with yogurt makes a creamier version than tradition lemon bars  It's a total breeze, made from only 6 simple ingredients: plain Greek yogurt, cream cheese, eggs, lemons, sugar, and vanilla extract. 

Ingredients

  • LOW FAT LEMON BAR CRUST
  • 1 cup white whole wheat flour
  • 1/3 cup unsalted butter, melted
  • 1/3 cup maple syrup
