No Bake Homemade Granola Bars Recipe using PB Powder

As an active family, we are always in need of yummy snacks to hold us over to the next adventure. As my third favorite holiday, the Fourth of July, is approaching, I can’t help but be inspired by all the patriotic USA snacks and treats at the grocery store. 

Obviously, this USA Granola Bars Recipe  can be made all year round.

Homemade Chewy Granola Bars Recipe 

With the holidays approaching and the US Women’s Soccer National team crushing it in the World Cup in France, red, white, and blue is everywhere. This recipe uses PB Powder which is a great replacement for full fat butters. 

Fourth of July is a time for family, activity, and food. I wanted to create a festive snack that is (mostly) healthy. Red, white, and blue M&Ms are the perfect vehicle for Summertime Granola Bars. These bars are super healthy and refined sugar-free, except for the extra chocolate add-ins.

The bars include oats, almonds, chocolate chips, peanut butter, olive oil, honey, salt, vanilla, and most importantly M&Ms. I’m sure you can find all of these ingredients in your pantry already.

Here is how to make these fun summer NO BAKE Granola bars Recipe!

What you need for homemade granola bars. 

  • 1/3 cup of olive oil (can be substituted for coconut oil or vegetable oil)
  • 1/3 cup of “liquidy” nut butter (I recommend natural peanut or almond butter- I actually did 1/4 cup
  • of natural plus a 1/4 cup of PB powder and added an extra tablespoon of olive oil)
  • 1/2 cup of honey
  • 1 teaspoon of salt
  • 1 teaspoon of vanilla
  • 3 cups of old fashioned oats
  • 1/2 cup of chopped almonds
  • 1/2 cup of mini-chocolate chips
  • 1/2 cup of M&Ms (we chose red, white, and blue, but of course any color, flavor, or size will work)

No Bake Homemade chewy Granola Bars Recipe are better than anything you can buy in a store using PB powder

Ingredients

  • 1/3 cup of olive oil (can be substituted for coconut oil or vegetable oil)
  • 1/3 cup of “liquidy” nut butter**
  • 1/2 cup of honey
  • 1 teaspoon of salt
  • 1 teaspoon of vanilla
  • 3 cups of old fashioned oats
  • 1/2 cup of chopped almonds
  • 1/2 cup of mini-chocolate chips
  • 1/2 cup of M&Ms (we chose red, white, and blue, but of course any color, flavor, or size will work)

Instructions

  1. First, measure out the olive oil, nut butter, and honey stir them in a saucepan. Begin to simmer the mix, and wait for the mixture to fully bubble.
  2. Once the whole mixture is bubbling, start a timer for one minute and allow the mixture to continue to bubble. When the minute is up, remove the mixture from the heat and add in the vanilla and salt and stir. Leave the mixture to set for 15 minutes.
  3. Meanwhile, chop the almonds, measure the oats, chocolate chips and M&Ms. Additionally, line a 8x8 pan with parchment paper for a clean removal.
  4. Pour the dry ingredients into the mixture after the 15 minutes and stir with a spatula until all the ingredients are folded together. With the spatula, put the granola mixture into the lined pan. Using a small piece of parchment paper, press the granola down and spread evenly.
  5. Once the granola is firmly packed, feel free to press more m&ms to the top. Then refrigerate for at least four hours before cutting.
  6. Once the bars have set, remove the bars from the pan by lifting the parchment. Then cut to form bars. I made my bars 1x4 inches, resulting in 16 bars.
  7. Make sure to store them in the refrigerator until eating.

Notes

** I recommend natural peanut or almond butter- I actually did 1/4 cup of natural plus a 1/4 cup of PB powder and added an extra tablespoon of olive oil
