No Churn Berry Ice Cream Recipe

We wanted to share this no churn Berry Ice Cream recipe before National Ice Cream Month ended.  Thanks to Nielsen-Massey for supplying us with samples to make this and the  Berry Ice Cream Sandwiches

We own an ice cream maker attachment to our Kitchenaid mixer but have not used it in a while.  Making homemade ice cream is the bomb but does take time.  Most importantly you need to remember to freeze the ice cream maker bowl. 

We have discovered No churn ice cream that comes together in minutes and takes a few hours to freeze.  For the best results, make it so it can freeze overnight or for 8 hours. 

 

no churn berry ice cream recipe The first step in making a nochurn ice cream is to whip up the heavy whipping cream to heavy peaks.    It is super helpful to put the whisk and the bowl in the freezer first so the cream stays nice and cold.

Depending on the flavor of the ice cream, you will need condensed milk and extracts.  There is so much flexibility in this recipe.

We used fresh berries in our recipe because they are in season.  Feel free to use frozen berries just make sure they are defrosted before proceeding. 

 

 

Simply mash them with a fork or p0tato masher. 

 

This is the first time I have used Vanilla Bean Paste.  Just check out all the beans in the Nielsen-Massey Tahitian Pure Vanilla Bean Paste

Carefully mix the whipped cream with the paste and condensed milk. You don’t want to over mix and lose the fluffiness of the whipped cream.

Then you will begin layering the flavors of your ice cream. Swirling the two inbetween layers. If you don’t you will have sections of plain ice cream.

This is so easy and you don’t need any special equipment. Just a loaf pan. We covered it with parchment paper for easy cleanup and removal.

Then simply place the loaf pan into the freezer and let the magic happen. Stay tuned to see how we create the most delicious ice cream sandwiches with this berry ice cream.

Berry Swirl Ice Cream

Berry Swirl Ice Cream

In a medium bowl, add heavy whipping cream. Using a hand mixer or whisk, whip cream until stiff peaks form. Click here to learn the best way to whisk.

Fold in the sweetened condensed milk and vanilla bean paste using a spatula. In a separate bowl, combine berries and sugar. Mash together using a fork or potato masher.

Pour half of the whipped cream mixture into a loaf pan and add half of the berry mixture by the spoonful to the top. Swirl in berries with a knife. Pour the remaining whipped cream mixture into the pan and add the remaining berry mixture. Swirl until combined. Freeze for at least two hours or overnight for best results.

How to make homemade ice cream! No churn strawberry ice cream recipe with just 3 main ingredients. 

Ingredients

  • 2 cups heavy whipping cream
  • 14 ounces sweetened condensed milk
  • 1 ½ teaspoon Nielsen-Massey Tahitian Pure Vanilla Bean Paste 
  • ½ cup fresh or frozen blackberries*
  • ½ cup fresh or frozen strawberries halved*
  • 2 tablespoons granulated sugar

Instructions
