Banana Cake Recipe using PBFit Powder

When you have a classic recipe like Ina Garten Banana Cake Recipe and adjust the recipe using PBFit Powder you have a winner.  Make your high protein cake and eat it too!!

I mean if a banana is in the cake recipe name, shouldn’t that mean it is healthy?  We have made some amazing PBFit Powder Recipes like Protein Powder Muffins, Oatmeal PB fit cookies, and pb fit peanut butter cookies.  My family had no idea it was in any of them.

How to Bake with PBFit Peanut Butter Powder

Just sub in peanut butter powder for 1/3 the amount of flour called for in the recipe. For recipes that call for peanut butter already, simply rehydrate the powdered peanut butter and use the same amount.

In this cake of the Peanut Butter Banana Cake with Peanut Butter Cream Cheese Icing, we just changed out a few ingredients for PBFit powder resulting in a higher protein dessert. 

  • 3 very ripe bananas, mashed
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar, lightly packed
  • 1/2 cup vegetable oil
  • 2 extra large eggs, at room temperature 
  • 1/2 cup sour cream or Non Fat Greek Yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour, after sifting
  • 1/2 Cup Peanut Butter Powder (PBFit)
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt

PBfit Cream Cheese Frosting

  • 6 ounces cream cheese, at room temperature
  • 6 tablespoons unsalted butter, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 1/4 cups sifted confectioners’ sugar
  • 1/4 Cup PB Fit Powder (Chocolate variety is optional)
  • Chopped Peanuts (For Topping optional)

 

How to Make PBFit Frosting Recipe

For the Frosting: We just subbed out a 1/4 cup of the confectionary sugar for the powder.  Be sure to taste it to be sure you have a sweet enough frosting.

This Banana Cake tastes great simply served warm, sprinkled with powdered sugar.  However, if you want to take it up a notch, cool completely and top with Peanut Butter Powder Cream Cheese Frosting.

MIX cream cheese, butter, and vanilla in the bowl of an electric mixer fitted with a paddle attachment on low speed until just combined. Don’t whip. Add powdered sugar and PBFit mix until smooth.

We topped our old fashion banana cake with our peanut powder frosting and then topped it with a little cocoa powder and chopped peanuts. 

This is optional of course but we thought it let people know what flavors they were about to taste.

Banana Cake Recipe using PB Fit Powder

Old Fashioned Banana Cake with a nutrition bump. We added PBFit Powder to our recipe in both the cake and the frosting.

Ingredients

  • 3 very ripe bananas, mashed

  • 1/2 Cup Peanut Butter Powder (PB Fit)
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt

Instructions

    1. PREHEAT oven to 350 degrees. Grease and flour a 9 x 2-inch round cake pan, or line the pan with a piece of parchment or wax paper cut to fit inside the cake pan. Spray the liner and sides lightly with cooking spray.
    2. MIX bananas, granulated sugar and brown sugar in a bowl with an electric mixer on low speed until combined. Add oil, eggs, sour cream and vanilla. Mix until smooth.
    3. Add flour, baking soda, Peanut Butter Powder and salt. With the mixer on low, mix just until combined.
    4. Pour batter into the prepared pan and bake for 40-45 minutes, until a toothpick inserted in the center comes out clean. Cool in pan for 5 minutes, turn out onto cooling rack.

      How to Make PB Fit Frosting Recipe
    5. Serve warm, sprinkled with powdered sugar, or cool completely and top with Peanut Butter Powder Cream Cheese Frosting.
