Fast and easy muffin recipe that can beeasily changed up to meet your tastes for the day.

Ingredients

  • 2 cups sifted all-purpose flour
  • 3 teaspoons baking powder
  • 1 ⁄2 teaspoon salt
  • 1/4 cup sugar
  • 1 egg
  • 1 cup milk
  • 1 teaspoon vanilla
  • 3 tablespoons melted butter or canola oil

Instructions

  1. Sift, measure and then place the flour in a large bowl.
  2. Add the baking powder, salt and sugar.
  3. Beat the egg well in a small bowl.
  4. Add the milk, vanilla and melted butter and mix thoroughly.
  5. Put the above wet ingredients into the large bowl of dry ingredients.
  6. Stir just until the flour mixture is moistened.
  7. Fill greased muffin tins 1/2 to 2/3 full.
  8. Bake at 400 For 20-25 minutes.

Notes

For Blueberry Muffins: Add 1 tsp Ground cinnamon & 1/2 tsp lemon zest to dry ingredients
increase sugar to 1/2 cup
Stir 1 cup fresh blueberries into the batter.
