Cake Mix Cookie Bars as are super easy way to feed a crowd dessert. When we were younger, we often made meals for friends who had babies. Unfortunately, as you age, the need to bring meals to friends doesn’t change the circumstances do.
This week I had to make 2 meals for friends. In addition my go-to Chicken Enchilada Quiche I needed an easy dessert that would feed a crowd.
I say crowd because, between 2 families and saving a few for my kids, it had to feed 10 people. These Cake Mix Cookie bars were a perfect choice and since I had Valentine M&M’s it was even better.
Easy Cake Mix Cookie Bars with Pudding
WHAT YOU NEED TO MAKE CAKE MIX COOKIE BARS
- 1 (15.25 oz.) box yellow cake mix
- 1 (3.4 oz.) box instant vanilla pudding mix
- water
- vegetable oil
- large eggs
- Semi-Sweet chocolate chips
- Holiday M&M’s or more chips
If you tend not to make desserts from scratch because you have to measure too many things, this is definitely up your alley. Besides the oil and water, there is no real measuring.
These simple cake mix cookie bars come together in just a few minutes and cook for an additional 22 or so. Meaning in about 30 minutes you have a dessert to feed a crowd or bring to a bake sale.

What types of add-in can I add to cake mix cookie bars?
Since we had Holiday M&M’s we used half chocolate chips and the rest M&M’s. Be sure to save some extra to sprinkle on the top as they tend to disappear once they bake.
With the addition of the extra pudding, the batter resembles that of a cookie batter. You will need to spread the batter evenly into the pan.
Bake and wait. Trust me the whole house will fill with an amazing aroma.
If you can stand to wait for them to cool, you will have a cakey, cookie bar that could not be simpler to make.
These travel well, so box them up as they are the perfect potluck or bake sale dessert. We hope these bring some smiles to our friends who need a little pick me up.
Easy Chocolate Chip Cake Mix Cookie Bars
Easy 5 ingredient cake mix cookie bars come together in less than 30 minutes.
Ingredients
- 1 (15.25 oz.) box yellow cake mix (I used Betty Crocker)
- 1 (3.4 oz.) box instant vanilla pudding mix
- ¼ cup water
- ¾ cup vegetable oil
- 2 large eggs
- ½ cup milk chocolate chips
- ½ cup holiday M&M's
Instructions
- Preheat oven to 350° F. Grease a 9x13 inch baking dish with cooking spray.
- In a large bowl, combine cake mix, pudding mix, water, oil and eggs. Mix together well. Stir in chocolate chips and M&M's. Batter will be thick.
- Spread batter evenly into prepared pan. Bake 22 to 26 minutes or until edges are golden brown. Remove from oven and let cool before slicing and serving. Enjoy!
