A few weeks ago I introduced you to a new friend, Rhubarb. I made an amazing Strawberry and Rhubarb Crisp. After finishing the plate off for breakfast, what was left of it, I found myself once again in the produce section staring at a large batch of rhubarb… Decided on Strawberry Rhubarb Pie.
This time I just bought 5 extra long stems without googling a recipe in hopes I would find yet another amazing and easy dessert recipe. I have amended this recipe to satisfy the skeptics who are not sure they will like Rhubarb Pie and added strawberries which are a big favorite
Enjoy this Strawberry Rhubarb pie that is made especially into an easy dessert by using a pre-made pie crust and then topped with a simple streusel.
Strawberry Rhubarb Pie Recipe
This time I decided to discover Rhubarb on its own and found a recipe for Rhubarb Pie from Martha Stewart. I have stayed away from her recipes because I think they are more complicated than I need on an everyday basis and sometimes they have obscure ingredients.
Besides rhubarb, I had everything to make this. ( a frozen pie crust expedited this recipe as well). I adjusted the recipe to make a Strawberry Rhubarb pie since I had not purchased enough rhubarb.
HOW MANY CUPS IN ONE STALK OF RHUBARB?
Three stalks only yield about 1 cup of cut up fruit.
Look at all this yumminess. All you need to do is chop and stir and you are on your way to an amazing dessert that is so flavorful no one will even know that they were eating Rhubarb.
CAN I USE FROZEN FRUIT IN A PIE?
Of course you can. I would just defrost it in a colander to release some of the water.
I think I am truly in love… It was suggested to make this in advance and let it cool completely before serving so I made it the night before we were going to eat it.
Wow, this was hard not to dig right into the pie and taste it. It is best served warm with some ice cream but room temperature was enjoyed by all. I added a 1/4 cup of sliced almonds just as an extra crunch and protein”) I will try anything to rationalize eating a dessert even if it is a fruit pie.
You don’t have to make the topping in a food processor, but its easier than using a pastry blender.
I really liked the topping and pie filling. It could not be any easier. Some people worried about the lack of seasonings added to the filling but it really does not need any amendments.
So while you can find Rhubarb in the market, grab a few stalks and see how wonderful and easy this dessert can be. Make it the night before Mothers Day Brunch and everyone will be happy. (The kids and husband can easily make this too so pass on the post to them

Strawberry Rhubarb Pie with Crumb Topping

Ingredients
- 4 cups of cut of strawberries and Rhubarb. Ideally half and half but whatever you have.
- 1 cup sugar
- 2 tablespoons cornstarch
- Pinch of salt
- Pie Crust
- For TOPPING
- 1/2 cup cold butter cut into squares
- 1 cup brown sugar
- 1 cup flour
- dash cinnamon
Instructions
- Preheat oven to 400 degrees. with rack in lowest level. In a large bowl, toss rhubarb and strawberries with sugar, cornstarch, and salt.
- Pour into pie shell; sprinkle with Crumble Topping. Place pie on a foil-lined rimmed baking sheet.
- Place pie in oven; reduce heat to 375 degrees. Bake until topping is browned and crust is lightly browned, about 1 or until bubbly (Cool completely before serving)
- Add scoop of vanilla ice cream
- FOR TOPPING put all topping ingredients in a food processor until crumbly
